Soup. Kamut udon noodles, cubed tofu, white onion, green onion, ginger and garlic in a yellow miso/tamari broth.
Chickpea salad with radish, celery, red onion and nori.
Dressing. Pureed tofu, umeboshi paste, mirin and garlic.
Millet/rice cake and avocado.
